• 1 1/2 lb. turkey sage sausage, bulk (or use sausage of your choice)
• 1/4 head red cabbage
• 3 large carrots
• kale
• coconut oil or tallow
• sea salt and pepper
Heat the oil over medium in a large skillet. Add the sausage. Brown it on all sides, tossing often.
Meanwhile, chop the three veggies separately in a food processor. Once the meat has browned, add all of the veggies to the skillet along with any other seasonings you wish. Cover and cook for 10-12 minutes, mixing often. It's ready when the vegetables have softened some, but still are a bit crisp.
Made some of this for breakfast but added some eggs and baked it a bit so its sort of like a semi-quiche.

Just tried it last night and like Eddie, added eggs (but without the baking). My kids loved it and while they usually balk at anything new or too full of veggies, they thought the colors made it look cool. So a win all the way around. Thank you.

My daughter (7) loves this recipe. I appreciate that you still get that yummy sausage flavor, but it's less intense due to the presence of the veggies. A fabulous breakfast, lunch, or dinner!
